Hoki On Gnocchi with Roasted Tomato Sauce
Have you had your 5+ a day? Try pan fried hoki loin with roasted almond and tomato sauce for dinner tonight. The healthy dish is loaded with veggies and energy-boosting hoki loin.
Ingredients:
Fish
X6 Hoki Loin
125g Seasoned Flour
30mls Oil
50g Butter
1 Lemon Juice
Gnocchi
250g Instant Mash (Maggi)
1-2 cup Flour
15g Fresh Dill
1 Lemon (zest)
2-3 cups Boiling Water
20mls Oil
50g Butter
Roasted Tomato Sauce
4 Tomatoes
4 Garlic Gloves
25g Almonds
75mls E.V.O.O.
1/2tsp Smoked Paprika
1/4 tsp Cayenne Pepper
1/4 tbs Brown Sugar
Season to taste
Broccoli
1-2 Heads Broccoli
20g Butter
2g Green Herb Stock Powder (Maggi)
Directions:
Fish
- Dry fish fillets and toss in seasoned flour
- Fry in hot pan with oil and butter until cooked
- Finish with lemon juice
Roasted Tomato Sauce
- Roast tomatoes, garlic cloves and almonds (10-15 minutes)
- Peel tomatoes and garlic cloves
- Add spices and seasoning and blitz
- Adjust consistency with olive oil
Gnocchi
- Chop dill, grate lemon zest
- Make mash, add herb mix (remove two portions)
- Fold through a little flour at a time until it forms a soft dough
- Put dough into piping bag and pipe onto a tray and chill
- Cut into gnocchi and poach until they float, remove and fry in oil and butter
Broccoli
- Cut broccoli into portions
- Poach in buttered vegetable stock
